Delicious New Spring Clean-Up Diet

Strawberries with Fresh Ricotta and Rye Crisps: 3 rye crisp breads (like Finn Crisp) with 2 Tbsp fresh whipped ricotta, 1/3 cup sliced strawberries, 1 dash freshly cracked black pepper, and 1 tsp drizzled honey.
Frisee Salad with Blood Orange, Roasted Beets, and Pistachios:Toss together 2 cups frisee lettuce, ½ cup sliced blood orange segments (or regular orange), ½ cup roasted and diced beets, and 1 Tbsp sliced shallots. Top with 2 tsp toasted, chopped pistachios and 1 Tbsp crumbled goat cheese. Dress with 1 Tbsp champagne vinaigrette*. Add 3 oz poached salmon for some extra protein. *Champagne vinaigrette: 1 Tbsp extra-virgin olive oil, 1 tsp champagne vinaigrette, ¼ tsp Dijon mustard, and salt and pepper to taste. 
Roasted Cod with Chimichurri and Fingerling PotatoesSeason 4 oz skinless cod with salt and pepper. Place in a small skillet over medium-high heat and cook, 2 to 3 minutes. Finish in the oven at 400° until opaque, 8 minutes. Spoon 1 Tbsp chimichurri sauce* over fish and serve with fingerling potatoes.***Chimichurri sauce: 2 Tbsp extra-virgin olive oil, 2 tsp red wine vinegar, 1 Tbsp chopped cilantro, 1 Tbsp chopped parsley, ¼ seed crushed fennel, 1 pinch red pepper flakes, 1 clove minced garlic, and salt and pepper to taste. Will make extra. **Fingerling potatoes: Bake 1 cup fingerling potatoes, halved and roasted, with 2 tsp olive oil, salt, and pepper at 400°, 20 to 25 minutes.
